It. Is. So. Hot. Y'all. We are in a heatwave where I am from and finding the energy to make supper is hard, and finding something delicious, easy, that doesn't heat up the kitchen is even harder. For supper tonight you must try this poke bowl, it is so quick and simple. Not to mention it is also very healthy, cost effective, and easily changeable based on availability and taste preferences. Here's how I made & assembled it... Make a delicious rice bed for your bowl. Then start adding your veggies! Here we have some edamame. Delicious, farmer's market carrots. 🥒🥒🥒🥒🥒🥒🥒🥒 Sliced avo's! Pickled red onions. Protein! Dress your bowl because it can't be naked! My recipe served 3 adults, just add more rice if you have more people! 🔥Overall Oven Time: 15 Minutes 🍅Prep Time: 15 Minutes Ingredients: Rice: 2 Cups of Instant Rice 2 Cups of Water 2 Tbsp of Butter 1 Pinch of Salt 2 Sliced Green Onions Pickled Red Onions: 1/2 of Large Red Onion 1 Tbsp of White Sugar 1/4 of White Vinegar 1/4 Cup of Hot Water 1 Pinch of Salt Vegetables: (the amount you put in is personal preference/depends on how many people you are feeding) Edamame Beans Shredded Carrots Cucumbers Avocados Additional Toppings: Generous Squeeze of Sriracha/Mayo Dressing Plant-Based Fishless Cakes (I used the brand 'Good Catch' and they were amazing!) Generous Dose of Soya Sauce Toasted Sesame Seeds + Sunflower Seeds The Process: In a medium casserole dish add your rice, water, salt, butter, and green onion. Place in a oven set to 350 degrees and follow baking time on package. Mine takes about 15 minutes, and your end result should be nice and fluffy with no extra water. While you are waiting for your rice- pickle your onions! This recipe is so good for being able to multi-task! In a small container add vinegar, hot water, sugar and salt. Stir well so the sugar and salt dissolve. Add your chopped red onion to your pickling liquid, cover and set in the fridge. If you are still waiting for your rice, this is a perfect time to prepare your vegetables! I cut mine into nice, bite sized pieces. Cook your plant-based fish cakes based on package instructions. In the same pan you used for the fish cakes, toast your sesame seeds, and sunflower seeds. Once your rice is cooked, evenly distribute in to bowls, and add your soya sauce over the top. Now comes the fun part of assembling! I added enough veggies to fully cover the top of the rice. This is all based on your preferences... If you like a vegetable a lot, add more in! If you dislike something, take it out! It is very adaptable. Add your plant-based cakes and give a healthy squeeze of your Sriracha/Mayo! Enjoy!

This is a re-creation of one of my favourite tacos from one of my favourite places: Café Mosaics. Due to Covid, our indoor dining has been shut down by the Province, and this Cafe's Uber Eats menu does not contain these tacos... Which means, it has been 1+ year since I have had them. I just knew that my body needed some version of these tacos, so I did my best to recreate them (with my own twists) and they actually turned out delicious!! Okay, enough of my taco pity party rambling, here's how you make them! First things first, we need a really good fake tuna mixture: Another very important part is the crispy taco shells- I rigged a contraption so the tortilla's can hang and form their signature shape. (This is an extra step, but I refuse to use the pre-made hard taco shells... This extra step is worth it, promise.) Once they are cooled down, they stay solid, and are ready to be filled. Take your delicious mixture, and your tasty taco shells and assemble! 🔥Overall Cook Time: 10 Minutes 🍅Prep Time: 20 Minutes Ingredients: 'Tuna' Mixture 2 Cans of Drained Chickpeas Dash of Salt & Pepper 2/3 Cup of Mayonnaise (vegan or not) 1 Tsp of Paprika 1/2 Tsp of Cayenne 2 Tsp of Chopped Garlic 2 Stalks of Chopped Green Onion Taco Shells 10 Small Tortilla's 1/4 Cup of Vegetable Oil The Process: Drain and rinse your cans of chickpeas, and put them in a medium sized bowl. Take a pastry cutter, a potato masher, or even a fork and mash the chickpeas to your desired texture. (See photo above for my desired texture). Once you have mashed your chickpeas- add in your seasonings; S&P, Garlic, Paprika, Cayenne, Garlic, and Green Onion and Mayonnaise Stir this mixture well and put in the fridge. For the shells, take a medium frying pan and pour in your oil. Set the temperature to medium and let your oil get hot before you put in your first tortilla (otherwise the tortilla will just absorb the oil and be soggy). One by one put your tortilla's in the oil and let them brown on each side (light brown not too dark). Once they are appropriately browned, you can drape them over chopsticks (as seen above), or you can lay them flat and they can be more of a tostada instead of a taco shell. Let your shells cool enough to handle and assemble your tacos! Treat yo self! Try this easy and delicious bruschetta for the perfect mid-afternoon snack! Mmmmm... 🍅Prep Time: 10 Minutes Ingredients: Tomato Mixture: 2 Cups of Finely Chopped Tomatoes (I used a mix of Roma and Cherry) 1/2 Cup Parmesan Cheese 1 Tsp Chopped Garlic Dash of Salt & Pepper 1 Tbsp Chopped Capers (with a splash of their juice) 1/4 Finely Chopped Red Onion 2 Tsp Everything Bagel Seasoning (optional) 2 Tbsp Olive Oil 1 Tbsp Balsamic Nectar (or Balsamic Vinegar) The Process: In a large bowl combine all your ingredients listed above and stir well! That's it... It is so easy... Put on top of a cracker and enjoy!

Make this for supper! Do it! Right now! These were so good! I like to throw in a mix of fake 'meat' and a lentil or a healthy grain when I can. Not only for the nutritional value, but also taste (my family can find the beyond meat quite fake 'beefy' tasting). I also like to add in grains to make it a little bit cheaper! Because let's face it, Beyond Meat can be really pricey! I was a student in university, trying to meal prep while also getting my protein in, so I get the struggle of stretching out your meals. Okay, enough of the rambling, let's dive in! This is our delicious 'meat' mixture. Add as much seasoning as you want to your mixture in this step because these are the flavours that will end up being locked in the patty forever! Now that we have made our master mix, form them into patties! I made 4 large patties with my mixture. Now that you have cooked your patty, dress her up and enjoy! 🔥Overall Cook Time: 15 Minutes 🍅Prep Time: 10 Minutes Ingredients: Burger Mixture 1 Package of Beyond Meat (raw) 1 Package of Casbah Quinoa (200 Grams) Dash of Salt & Pepper 1 Tsp Crushed Garlic 2 Chopped Green Onions 1 Whole Egg 1/2 Cup Bread Crumbs 1/2 Feta Cheese 1 Tsp Italian Seasoning 1 Tsp Seasoning Salt 1 Dash of Red Pepper Flakes Bun Dressings: Fresh Bakery Bun Sliced Roma Tomato Handful of Arugula Ketchup, Mustard, BBQ Sauce & Mayonnaise (all to taste) Slice of Cheese A Few Slices of Pickles The Process: In a large bowl combine your meat and quinoa mixture. Add in your seasonings (green onions, garlic, Italian seasoning, seasoning salt, S&P, red pepper flakes and feta) and binders (egg and breadcrumbs). Work the mixture with your hands to get it very well incorporated. Form your patties (as mentioned above I was able to get 4 large patties). In a large skillet add 2 Tbsp. of Canola Oil (or any other neutral oil) set it to medium heat and let your pan get hot before you add in your patties, because you want a nice crust on the outside. Add your patties to the oil and let them cook on each side until they are brown- if you flip them too early the WILL fall apart! Once both sides of your patties are brown and holding together, place on your fancy dressed bun and enjoy!! Serve with a side of fries or salad and dig in!

I belong to the Anti-Cilantro club. It tastes like soap to me, and one leaf can ruin a whole dish. I love the idea of green goddess dressing because it is light, fresh, and herbaceous BUT it is hard to find one without cilantro. Here is my version of a creamy, cilantro-free dressing. And you can put this stuff on anything! Like legit anything... Burgers, Sandwiches, Salads, Tacos, Veggies, Pasta (the list can go on). See the recipe down below and let me know how it goes! ⏳ Total Time: 5 Minutes Ingredients: 1/2 Cup of Plain Greek Yogurt Handful of Fresh Parsley 1 Tsp of Fresh Garlic 1/2 Avocado 1/2 Tsp of Cayenne 1 Tbsp Lime Juice 1 Dash of Salt & Pepper 1 Tbsp of Olive Oil (Optional) The Process: In a blender combine the ingredients above (that's literally it, y'all) If your dressing is too thick (or if your blender is a piece of junk, like mine) you may need to loosen it with your olive oil so it gets a little looser, and is able to combine better. Enjoy your new fav condiment!

My toxic trait is adding to many things to the pot. 😖 And because of this issue I have, our family uses the word 'Shtoup' to describe a lot of the dinners I make; is it a soup, is it a stew? No! It is a Shtoup! For this recipe, I went a little ~Extra~ with the amount of pasta I added, I added a full bag because I love the pasta in soup, it is arguably the best part, but you can add less if you want it more liquid-y, or add more broth, it is totally up to you. This recipe is so easy to pull together- Enjoy Veggie Friends! I started with my base of onions, garlic, S&P and some Beyond Meat. (If the fake meat grosses you out, don't use it) Our base is starting to come together, add in some tomato paste for deep flavour and I used one package of low sodium taco seasoning. Look at the beautiful, bubbling mess! Just look at it! This is the fun part where we are now going to add in all of our favourite bits! And after it has been all cooked down, it will look like this! Gorgeous! ___________________________________________________________________________ 🔥Overall Cook Time: 45 Minutes 🍅Prep Time: 10 Minutes Ingredients: Base/Broth: 1/2 Large White Onion 1 Tbsp of Olive Oil Dash of Salt & Pepper 1 Tsp of Garlic 1 Can of Crushed Tomatoes 1 Tbsp Tomato Paste 1 Package of Beyond Meat Ground Beef 1 Package of Taco Seasoning 2 Knorr Vegetable Bouillon Cubes 8 Cups of Water 1 Tsp of Chili Powder 1 Dash of Red Pepper Flakes Add-Ins: 2 Chopped Carrots 2 Chopped Celery Stocks 1 Can of Red Kidney Beans 1 Can of Black Beans 1 Package of Cappelletti Pasta 1 Diced Bell Pepper The Process: In a large pot, on medium heat, combine the onions, garlic, olive oil, S&P Let that cook for 5 minutes so the onions get a little translucent. Once the onions have been cooking for 5 minutes add in your fake ground beef to get that browning, also add in your taco seasoning, chili powder, red pepper flakes, and tomato paste- cook for another 10. Once that mixture has had time to brown, add in your can of tomatoes, water and your bouillon cubes. Cook that for another 15 minutes until it is bubbling. While your soup base is cooking, prep your veggies. I went for a small cube on all of them because I don't like them to take forever to cook. Once your mixture is hot and bubbly, add in your vegetables, your two types of beans and your pasta! this is a easy one pot dinner so everyone gets in the pool! Let your mixture cook for about another 15 minutes, or whoever long it takes for you noodles and veggies to get to your desired tenderness! Season to taste, I am a little wimp with spice but you could add cayenne if you want to! I served it with some fresh bakery cheesy breadsticks, it is was delicious. Enjoy!

I am not a recipe 'follower'. I am a recipe 'thank you for your suggestion but I am going to do it my way' kind of recipe user. This will become very clear with the following recipe for Ratatouille. I took a French Classic and made it my own, which is how cooking should be! Two things effect how I cook 1) Availability (I live in a small, rural town in the Alberta Prairies). So some ingredients I am just not able to find, or they are really expensive because they have to be brought in- and I'm on a budget! 2) Preference (I am a little picky). Cooked mushrooms are the devil and onions are used in very small quantities. Enough of me rambling- let's get to cooking! First things first- the key to a really good vegetarian meal is a really deep, flavourful base. Once those flavours have developed- add some more veggie goodness The actual time it takes to do the 'working' bits of this recipe are very minimal. HOWEVER, the cooking time is what will make you want to start this recipe way ahead of dinner time. These flavours need time to develop. Once the flavours are there and the onions are sweet and not offensively 'oniony' its time to layer baby! The easiest way I found to do this was to make the layers in my hand first, and then put them in the pot. (I burnt my fingers repeatedly trying to stick the veggies in the sauce individually) Make a few laps around your pot and it will look something like this... Ooooh she is so pretty! Time to bake! When it is done, the veggies will be soft and piping hot! Ta Da!! ___________________________________________________________________________________ 🔥Overall Oven Time: 60 Minutes 🍅Prep Time: 35 Minutes Ingredients: Sauce: 1 Large White Onion 1 Tbsp of Olive Oil Dash of Salt & Pepper 1 Tsp of Garlic 1 Can of Crushed Tomatoes 1 Tbsp Tomato Paste 1/4 Cup of Red Wine (if ya fancy) Vegetables: 1 Large Zucchini 10 Large Brussel Sprouts 1 Large Peeled Russet Potato 3 Roma Tomatoes The Process: In a medium sized Dutch Oven (or any oven safe pot) combine olive oil, sliced onions, S&P, and garlic. Let those cook on medium to low heat for 20 minutes until onions become soft, also starting to brown, add in your red wine and tomato paste. Once that mixture is cooked down, add in your can of crushed tomatoes. Cook that for another 15 minutes. While your tomato sauce is cooking, slice your veggies. I went for a 0.5 cm slice on the zucchini and potato, with a little thicker slice on the tomatoes and brussels because they take less time to cook. (Again, use these veggies if you want, but recipes are meant to be adapted so use what you want/have access to). Once your mixture is hot and bubbly, start stacking and placing your preferred vegetables. Once you have a ring of veggies circling the pot, top with some salt & pepper and into the oven for 60 minutes it goes! After your timer rings, make sure the veggies are soft- and you are good to go! I served it all on a bed of quinoa and it was amazing. Enjoy!
